Cauliflower Mash

A few weeks ago I ate out at a restaurant called True Food. I ordered the braised bison ribs on cauliflower mash and it tasted heavenly. I also got sick afterwards, which makes me suspect that there was something in there that they did not disclose <ahem> butter <ahem> Anyways, I decided to replicate it on my own and the results made me very happy.
I had tried to make cauliflower mash once before and really didn't like it. I tried the steaming method and it was just all wrong. No amount of flavoring salvaged it. This recipe was very simple and I've made it twice now, once with fresh cauliflower and once with frozen. The seasonings can vary depending on what you serve it with.

Cauliflower Mash
Ingredients
1 head cauliflower*
water
2 cloves garlic
2 tsp coconut oil
salt
seasonings (I used my Sandwich Sprinkle of course)
Instructions
1. Cut and separate cauliflower florets. Place in medium pot and just cover with water.
2. Peel and halve 2 cloves of garlic and place in pot. Add a few pinches of salt.
3. Turn heat on medium high and allow water to boil and cook cauliflower until soft when pierced with a fork
4. Drain. I removed one clove of garlic and left the other in for some garlick-y mash, but you can remove all or none depending on your taste.
5. Place cauliflower back in pot and use immersion blender to create the texture you want (this can also be done in a regular blender).
6. Add salt and other seasonings to taste and blend once more
7. Serve and enjoy.
