Ginger Lemon Honey Magic

I'm suffering from a gross attack of a sinus infection, ear infection, and mild flu. I've had to take my very first sick day from the new job (which is a lot of work if you're a teacher because sub plans are the worst). Anyway, one of the things that makes me feel much better when I'm sick is this sweet and sour, yummy, medicine-y drink which is something I actually quite look forward to.

In honor of flu season:
Ginger Lemon Honey Drink
Ingredients:
1-2 limes (how sour do you want it?)
raw ginger root
1 tbsp raw local honey
Instructions:
Peel ginger root and place in small saucepan. Cover with 1-2 cups of water.
Turn heat on medium/low and simmer ginger in water for 30 minutes (lower heat means you can keep the ginger in longer).
Squeeze lime(s) into mug.
Pour ginger water over lime juice and mix in honey until dissolved.
Drink warm and feel the vitamins course through your body.
I continued to make this in travel mugs for the next week to drink at work.
