Grilled Cheese - for the lactose intolerant

That title is SUCH a turnoff. I know. I can't help it. The lactose-intolerant deserve good food too!! There's nothing funky in this sandwich, I swear.
It's just good old-fashioned yogurt cheese with has the taste and texture of regular cheese but is made with yogurt rather than milk and is therefore, lactose-free.

I've missed grilled cheese SO much in the past few years since I cut myself off from foods I'm allergic too. Having recently fallen off of every wagon imaginable in my healthy-eating ways, I've been craving grilled cheese a lot. I compromised and I'm very pleased with the result. Especially with the arrival of soup season!

Grilled Cheese Sandwich
Ingredients:
3 slices of yogurt cheese*
2 tsp coconut oil
Sandwich Sprinkle (Penezys spice, but use any seasoning you prefer)
2 slices of bread (I used whole grain)
Instructions:
1. Place a pan on medium heat and melt 1/2 coconut oil. Place one** slice of bread on the melted oil and top with cheese slices (make sure to cover the entire piece of bread with cheese.
2. Cover pan and lower heat allowing the heat to melt all of the cheese and begin crisping bread.
3. Once cheese is melted, top with other bread slice. Use spatula to remove sandwich and place remaining coconut oil in the pan. Place bread, new slice down, on top of oil. Continue to cook until both sides are crispy and delicious. Sprinkle some sandwich sprinkle on bread before flipping.
4. Enjoy.
*I like to mix cheeses, but there isn't a large variety of yogurt cheeses. I've found a few at Trader Joes and one kind at Harris Teeter.
**If you have a cooktop or large pan, cook both slices of bread together with some cheese on each and then assemble towards the end. This makes for an even more amazing sandwich.
This kind of thing is basically like porn for me.
