Summertime Challah French Toast

I feel like I haven't posted a recipe in FOREVER. And that's because I haven't cooked in just as long. WIth my move imminent, mom has been spoiling me with food lately, and there just didn't seem to be a reason to drag myself into the kitchen.

However, summertime means lazy mornings and late starts to the day, which also means BRUNCH! Brunch is my favorite, even if it's just me eating a fancily-prepared meal I made for myself.

Challah French Toast

Ingredients:

2 thick slices challah bread (2 1/2 inches)

2 eggs, beaten

1 pinch/splash vanilla

1 pinch cardamom

1/4 tsp cinnamon

Vermont maple syrup

Instructions:

1. Mix eggs, vanilla, and cardamom together in a tupperware container or other dish

2. Place each slice of bread in the egg mixture and allow to soak through, flipping half way through

3. Place skillet on medium heat and grease. Once skillet is thoroughly heated, place bread slice on and cook through, flipping half way through. Bread should turn a crispy golden brown and should not be soggy in the middle.

4. Sprinkle cinnamon on top and top generously with some real maple syrup. Enjoy.
