Paleo Snack Bars

The first time I did the Whole30 the thing I missed the most was the efficiency and the texture of quick snacks. Chips, pretzels, granola bars, etc. When you're eating primarily veggies and meats, you don't get a lot of that satisfying crunch that accompanies a great chip.

Well, over the past year I've found some great snacks that satisfy that craving and give you something quick and easy to snack on. Most are 100% whole30 approved, others are a little questionable. I'll list a few here to make it easier for other people to find them (rather than embark on my year-long search for great paleo snacks and quick-eats.

Whole 30 Compliant Snacks and quick-eats*:

  • Terra Veggie Chips (Read the ingredients, the seasoned ones have sugar, but sweet potato and veggie mix don't and they're a great crunch. They're also great with salsa)

  • Trader Joe's Plantain Chips (these go GREAT with salsa or guac)

  • Lara Bars (they're packed with protein and taste AMAZING. I grab them on a hike or before a workout. What I love is they're usually no more than 3 ingredients. They get pricey though, so I'm replicating them below in my recipe)

  • Applegate beef hotdogs (these also have an astonishingly low number of ingredients and they're tasty. I microwave them and eat them with a homemade ketchup/mayo mixed dip)

  • Salsa (almost any store will carry at least one salsa that's all natural and a list of ingredients you could easily replicate at home. This is great with chips or you can pour a bit in your eggs and have fiesta eggs every morning. sometimes I mash up some avocado, mix in salsa and call in guac.

*This is not endorsed in any way. If you find a storebrand item with the same ingredient list, by all means go for it. Saving money isn't always easy when you're eating healthy

Paleo Snack Bars

Ingredients:

3/4 cup Dates

Nuts (your choice)

Spices

optional: fruit

DIrections:

1. Place all ingredients in food processor and pulse until combined

2. Transfer to parchment lined container (I used square cake pan) and press into shape

3. Leave 30 minutes to set

4. Cut into desired shapes, wrap in parchment or plastic wrap, enjoy.

The ingredients are vague, yes, but here's why. I made 2 different kinds already: Apple walnut cinnamon and roasted almond. After purchasing bulk ingredients from Costco, I simply experimented and these two tasted amazing.

Apple Cinnamon Walnut = walnuts, cinnamon, cardamom, 1/4 apple sliced, dates

Roasted almond = 1/2 cup roasted almonds (slightly salted)
