I LOVE sweet potato fries. One of the few things I can purchase from Costco and really get my money's worth is sweet potatoes. As you've seen from previous posts, they're versatile, tasty, and carby.. so basically they're perfect.
I get a bulk quantity of sweet potatoes from costco for fewer than $5. When I get home I immediately peel and chop a bunch of them. I place the cut sweet potatoes (cubed, cliced, chopped) into ziplock baggies and grab them throughout the week when I need a quick snack or a dinner side dish.
The great thing is that you can season them differently each time and it's like you've got a whole new snack. If you slice them thinly then you can get a nice crunch, but if you cut them in big thick chunks it's like steak fries.
Sweet Potato Fries
Ingredients:
2 large sweet potatoes, sliced into fry shapes
1 tbsp olive oil or sunflower oil
salt, pepper
seasonings*
*my go-to is chilli powder. A little cayenne will give them a kick. Garlic salt or garlic powder are a great flavor with steak. You can also toss them in some parmesan and herbs if you're into that kind of thing.
Instructions:
Preheat oven to 400 degrees
Line a baking sheet with foil
Place sweet potatoes on baking sheet. Drizzle with oil, sprinkle seasonings and mix together.
Bake 10 minutes. Using a spatula mix fries up, then place back in oven and bake 10-15 minutes (depending on fry thickness).
