Food Preparation Sundays

In my effort to organize my life and get excited for spring, I've undertaken some monthly resolutions. This month I'm trying to prepare all of my foods and lunches in advance. On Sunday (aka laundry, cleaning, homework, lesson planning, and organization day) I go grocery shopping, wash all of the foods, and chop.

For a few years now I've been packing my lunch snacks in small mason jars. I really recommend this because it reduces waste, stacks nicely in the fridge, and I can always see what's in each jar. At any time I've usually got grapes, peppers, or berries in jars in the fridge. Sometimes I'll pack my breakfast or a salad in there too.

In the preparation process I also chopped up some ingredients and placed them in zip lock bags to be used for dinners. One bag contains ingredients for stir fry. Another contains ingredients for fajitas. The last contained ingredients for salads. I chopped up some raw chicken and marinated some in different bags for those dinners (fajita seasoning, balsamic chicken).

This took a lot of time to prepare, but it saved me a lot of time later in the week. It also let me start my week off feeling really accomplished. I'm going to try to keep this up for the coming weeks. I'll let you know how it goes...
