Chocolate Chip Cookies

The east coast is experiencing a terrible blizzard as evidenced by the photo below. This is, of course, based on our standards for what qualifies as a blizzard, which are actually quite low. I'm experiencing some serious cabin fever. For three days all I've done is read, bake, shovel snow, and watch Netflix.

While I'm trying to make the most of these snow days (building deformed snowmen, baking cookies, and experimenting with hot chocolate) all I really want to do is go back to work. I'm sure I sound ungrateful and complainy. You'll say "why don't you just work through your winter bucket list? Sled or something!" but I just want something productive to do that will get be out of bed and out of the house.

Since I can't have that, I'll keep baking, watching classic films, and occupying my time with strange activities...

Cookies & Casablanca

Chocolate Chip Cookies

adapted from AllRecipes

Ingredients

  • 2 cups all-purpose flour

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 3/4 cup unsalted butter, melted

  • 1 cup brown sugar

  • 1/2 cup white sugar

  • 1 tbsp vanilla extract (1 tsp powdered extract)

  • 1 egg & 1 egg yolk

  • 1-2 cups semisweet chocolate chips (depending on preference)

Instructions

1. Preheat oven to 325 degrees. Line cookie sheet with parchment paper.

2. Sift flour, baking soda, and salt together.

3. In bowl of stand mixer (or medium bowl with hand mixer) cream together melted butter and both sugars. Beat in vanilla and eggs until creamy.

4. Mix in dry sifted ingredients until blended. Mix in chocolate chips with spoon or hands. Do not over-mix.

5. Break off pieces of dough and place 3-inches apart on cookie sheet. Size of dough ball will depend on cookie size preference. Bake 10-12 minutes. For larger cookies leave longer until edges begin to brown. Remove and allow to cool before transferring to cooling rack. Enjoy.

*You can freeze the dough (after scooping) to use later. Add extra time to baking if using frozen cookies.
