Brown Butter Maple Brown Sugar Cookies

Two words for you: Brown. Butter.

There are few things in this world that smell as good as burning butter on the stove. It can make the most basic of recipes into gourmet delicacies (just wait until you try my rice krispies).

It took me a long time to learn the magic of brown butter. I was so impatient. I thought: melt the butter, boil the butter, take it off the stove and get started already! I didn't understand the beautiful color I was aiming for:

Maple Brown Sugar Cookies

Yield:

Ingredients:

  • 1 1/2 sticks unsalted butter

  • 1 1/2 cups packed dark brown sugar

  • 2 1/4 cups all purpose flour

  • 1/2 tsp. baking soda

  • 1/4 tsp. baking powder

  • 1/2 tsp. salt

  • 1 egg + 1 egg yolk

  • 1 tsp. vanilla extract

  • 2 1/2 tbsp. Grade A maple syrup

  • 2 tbsp. brown sugar + 2 tbsp. white sugar (for rolling)

Directions:

  1. StartFragmentPreheat oven to 350 degrees F (176 C). Line cookie sheet with parchment paper

  2. In a small pan (preferably lightly colored) heat butter, swirling until it becomes a golden brown color with a slightly nutty smell.

  3. Allow butter to cool until semi-solid, but still slighly liquid. (I placed it in the freezer for 10 minutes)

  4. In the bowl of a stand mixer cream together butter and dark brown sugar until smooth.

  5. Add eggs, vanilla, and maple syrup, and mix well.

  6. In a separate bowl mix together flour, salt, baking powder, and baking soda. Add to the wet ingredients in batches until well combined.

  7. Roll 1/2 tablespoon sized balls of cookie dough in sugar mixture and place 1 inch apart on cookie sheet.

  8. Bake 10-12 minutes until edges are lightly golden brown. Cool and enjoy.
